I am totally obsessed with anything peppermint right now... so I thought I would share my favorite peppermint icing recipe with you today. It is my mom's recipe and one that people ask for because they like it so much...
There's isn't anything special about the actual brownies, though I do like to use a Ghirardelli double chocolate brownie mix when I make these. For large crowds you can double or triple the recipe and bake the brownies right on a cookie sheet. I made these ones last Sunday for my friend Kaari's annual cookie exchange. I am hosting a cookie exchange next week and am trying to decide if I should make these again... or try something else.
PEPPERMINT BROWNIE FROSTING
1 box powdered sugar
1 stick butter, softened
1 tsp vanilla
1-2 tsp peppermint flavoring
3 tbsp canned milk (evaporated)
2 drops red food coloring
Mix the all the ingredients together and add the milk as needed to make creamy consistency. Add the food coloring just until the pink color desired is achieved.
Spread on top of cooled brownies . Sprinkle crushed candy canes on top of frosting.
My son LOVES baking these brownies with me... and crushing candy canes is pretty awesome too (we use a rolling pin). Baking creates such great language and learning time. You can focus on following directions, introducing new vocabulary, counting, measuring, and etc. It is also fosters simple conversations and is our favorite way to build our relationship.

I live in Canada and I was going to ask that, too! Would 16 oz equal 2 cups measured out? That doesn't seem like enough!

Chantelle- this recipe makes exactly enough icing to cover a 13×9 pan of brownies… 16 oz of powdered sugar = 3.5 cups. Hope that helps.

Peppermint frosting – now that sounds good! I've never had it before. You know what would be really cool to try? Swirling the red food coloring to make a red and white pattern. Thanks for the Ghirardelli brownie mix tip! Trader Joe's Truffle Brownie Mix is really yummy, too.
